Casa Blanca has a long tradition of serving fine foods. Chef Esteban and his crew work tirelessly, using the freshest possible ingredients to create a variety or traditional and signature dishes.
Specialty of the lodge is the local caribbean seafood. Chef has his own fishing boat from which he is selects the catch of the day. A variety of snapper, grouper, barracuda and more are hand picked for preparation. Local caribbean lobsters are provided by the local fisherman's co-op located only a few minutes down the road. It is not an usual sight to see a lobster boat tied up to the Casa Blanca pier unloading lobster caught only minutes earlier.
Casa Blanca seating is arranged "family style". Fresh, clean linens, sparkling silverware & glassware and an array of condiments create a stylish way to dine. Combined with the waterfront view and the professional attentive staff, the dining experience at Casa Blanca is second only to the fishing.
The dinner menu at the lodge always include; fresh homemade bread, salsa assortment, a selection of the highest quality beef, pork, chicken, seafood, fresh local Yucateca fruits & vegetables, homemade beans or rice, and a homemade dessert.
Breakfast is spectacular. The sun rising over the caribbean, it's rays piercing through the slats of the dining room windows, the aroma of fresh coffee wafts through the air only disrupted by the smell & sound of fresh bacon & eggs sizzling in the pan. Take your time sitting down, each guest is greeted by a fresh smiling face and a beautifully arranged plate of fresh fruit with lime garnish. Choose to order al a carte eggs from the kitchen or pour yourself a bowl of cereal and select a sweet bread to go with your fresh glass of juice and or milk. Take another look out the window, yes you are awake, this is not a dream, it is going to be another great day.
After breakfast, each guest is treated to a very creative lunch buffet. Take your time looking through all the selections; conch ceviche, fried barracuda, roast chicken salad, fresh cold cut platter, crudite platter, pasta salad, snapper fritters, whole roast turkey, cookies and chips. Go ahead and prepare yourself the best boat lunch you will ever have. Pack it up in the tupperware supplied and hand your box off to the host or hostess. He or she will make sure that your gourmet creation makes it into your boat.
All in all we feel as though the cuisine at Casa Blanca is going to exceed your expectations. The staff on the island takes alot of pride in it's food & beverage service and it shows.
Authentic Recipe from the Island - try it at home. Simple Ceviche' Recipe
1 lbs fresh conch or snapper
1 cup fresh lime juice
1/2 cup minced mayan onion
1 cup diced avocado
1/4 cup cilantro
1/2 cup finely chopped seeded tomato
2 teaspoons minced jalapeno
2 tablespoons olive oil
1/4 teaspoon cumin
1/2 teaspoon salt
1/8 teaspoon cayenne
After patting the seafood dry, place in a glass bowl. Cover with the lime juice and refrigerate, let marinate until opaque, this will take about 3 hours. Place the marinated seafood in a clean bowl, and save the lime juice.
Add the rest of the ingredients to the seafood, gently tossing to mix. Add saved lime juice to taste. Refrigerate for 1 hour, and serve with fresh fried tostada chips
